Recipe
Peel and slice the lotus root into rounds. Peel and slice the Chinese yam into rounds or bite-sized pieces. Slice the ginger. Cut the lean pork into pieces and rinse.
If you prefer a clearer broth, blanch the pork briefly in boiling water, then rinse.
Place lotus root, Chinese yam, pork, ginger, and 6 to 8 cups of water in a pot. Bring to a boil, then reduce to a gentle simmer for about 45 to 60 minutes until the roots are tender and the broth tastes mild.
Add salt and pepper to taste. Serve warm.
