Cooling mung bean soup for Stomach fire

Mung beans (green beans) have cooling properties traditionally used to ease Stomach fire and support bowel movement. A fragrant pot with pandan for diet-related heat patterns.

The method

  • Yield 4–6 bowls
  • Time 45–60 minutes simmer (plus 2+ hours soak)

Ingredients

  • dried mung beans (green beans) 1 cup (200 g)
  • water 6–8 cups
  • brown sugar or rock sugar 3–4 tbsp / about 50 g, to taste

  • optional pinch of salt to balance sweetness

Optional

  • pandan leaves, rinsed and knotted 2
  • dried tangerine peel about 10 g

  1. Prep beans

    Rinse and soak the mung beans at least 2 hours (overnight is fine). Drain before cooking.

  2. Boil with pandan

    Bring the water to a boil, add knotted pandan (and optional dried tangerine peel), and boil about 5 minutes for fragrance.

  3. Cook beans

    Add the soaked beans. Simmer covered 45–60 minutes until soft and the liquid turns lightly cloudy green. Stir the sides and bottom occasionally. Top up with hot water if needed.

  4. Sweeten

    Remove the pandan and tangerine peel. Stir in brown sugar or rock sugar (start with 3 tbsp / about 50 g) and an optional pinch of salt. Simmer 5 minutes more.
